Dinner with Friends- Jessica's Broccoli Cheese Casserole

Hello friends! 

Do you have a special dish that a loved one makes that you ask for when you are having dinner at their house? I sure do and I have asked them to share their recipes with us. That way I don't have to continually bug them and ask them for the recipe, I can just look it up on my blog :)

Up first is my dear friend Jessica's Broccoli Cheese Casserole. It is SO good and makes a huge batch that you can eat off for days. An added benefit to this recipe is it is all made up of pantry staples. Go check your pantry, you might be able to make this today!


This recipe calls for

  • Instant rice
  • 2 cans of Cream of Chicken
  • 1 can Cream of Mushroom
  • 1 block of easy melt cheese, cut into small cubes
  • 1 chicken bullion cube
  • Butter
  • 1 bag of sweet corn
  • 1 bag of broccoli florets

Put some butter, a chicken bullion cube, and pepper in the water before you put the rice in. Cook however many cups of rice you choose. After its cooked put the rice in a big dish and fold in the cubed cheese until it is melted. Then fold in the Cream of Soups and your corn and broccoli. Sprinkle dabs of butter throughout the top of the dish so that it doesn't dry out in the oven. Cover with foil and bake at 375 for 30 to 35 minutes.

Jessica adds that if you want this casserole to be a meal instead of a side dish, add some chicken. She suggests to either cube some chicken breast and saute then in a pan with butter, salt, pepper, and rosemary or just boil them in salted water an add before baking.

Jessica has promised me that she will share her famous Chile recipe. So here ya go, Jess! We are holding you to it!

Update: I made this tonight and it was PHENOMENAL! I made a huge batch (two pans!) using 3 cups of rice. I also used the "queso" kind of easy melt cheese and it added a nice kick to it. I am going to add some Panko bread crumbs to the top of the second pan tomorrow. Yummy!
