Hello friends!
I am so happy to share this amazing recipe from my dear friend Christine over at 2 Men and a Lady. She is an amazing cook and I bug her ALL the time for her recipes. In fact, I think she shares recipes on her blog so I could just look them up instead of keep texting her :)
Without further ado, I present Christine's Chicken Roll Ups!
You will need:
5 Chicken Breasts
1 cup Panko
1 bundle of Asparagus
5 slices of Provolone
1/2 cup Mayo
3 tbs Dijon Mustard
Lemon, juiced and zested
S & P
Pound out your chicken to make a uniform and thin piece. We use baggies, forgot the plastic wrap!
Mix together your mayo, mustard, lemon juice and zest, and S & P.
Steam your asparagus for a few minutes in the microwave. Layer each piece of chicken with provolone and asparagus.
Roll up and place seam side down into a greased baking dish.
Spread the mayo/mustard mix over the chicken and sprinkle with Panko, pressing down to form a crust.
Bake at 475 for 25 minutes...and voila!
So simple and so fancy!
We love this so much we have used this same recipe and stuffed our chicken with all sorts of things!
